it's pronounced poh-kay. it's hawaiian style, not the stuff you find in most japanese restaurants. it's really common in hawaii, but unfortunately really hard to find in the us. it's sort of like a deconstructed cut roll minus the rice. it comes in dozens of variations and usually has some sort of raw fish or squid and sauce. i think i'm going to take a stab at the shoyu salmon this weekend.
